Description

Zero-waste in the Glen Dye kitchen is something that Caroline tries very hard to achieve.

To this end, any soft herbs that are left over from an event or a private dinner are quickly turned into Glen Dye pesto. The combination of herbs is never quite the same, and Caroline uses pistachios, hazelnuts, walnuts or sunflower seeds, always toasted, as the nut base.

The constants are excellent virgin olive oil, flaked sea salt, no garlic and no cheese, meaning not only is the pesto vegan, but it is always full of flavour without being overpowering.
